Matcha Grain Free Waffles

  • 1/2 cup almond flour
  • 1/2 cup tapioca flour
  • 2 Tbsp coconut flour
  • 2 tsp baking powder
  • 1/2-1tsp matcha powder
  • 2 eggs
  • 1/2 cup milk of choice
  • 2 Tbsp rice malt syrup or maple syrup
  • 1 cup fresh spinach leaves

1. Preheat waffle iron.
2. In a blender place milk, eggs, sweetener and spinach. Blend until smooth.
3.Transfer wet mixture to a large bowl and then add all dry ingredients.
4. Spray waffle iron with oil, then spoon quarter of the mixture into the waffle iron and cook until brown and fluffy. Repeat with remaining mixture.

Top with your favourite toppings and enjoy!
