Matcha Raspberry Chia Puddings

I love these Almond Matcha Chia Puddings, they are so quick to make, they give me my daily dose of omega-3’s and they’re a really easy way to sneak in some matcha powder for the best energy boost, and one that will keep you going all day. I recommend making these in the evening and storing them in jars all ready to go for the rest of the week.

Chia Pudding Ingredients:
- 1/3 cup of chia seeds
- 250mls of almond milk
- 1 tsp of matcha powder
- 1 banana
- 1 tsp of maple syrup
- 1 cup of organic raspberries
- 1 tbsp of cacao nibs
- 2 tbsp of chia jam
In your blender place the almond milk, matcha powder, banana and maple syrup. Blend well and then pour into a bowl with the chia seeds. Mix well and let the chia seeds expand for 10 minutes.
Once the chia seeds have absorbed all the liquid, scoop the chia pudding into two bowls. Top with some raspberries, cacao nibs and chia jam and enjoy.
Chia Jam Ingredients:
- 1 cup of frozen organic berries
- 2-3 tbsp of chia seeds
- juice from 1 lemon
- 1 tsp of maple syrup
Place all the ingredients in a jar and mix well. Let it sit until the berries have defrosted and the chia seeds have expanded. Once this has happened, mix well and store in the fridge for 1 week.
