Matcha Tiramisu

Meet your new favorite dessert. 

Matcha Matcha's signature umami flavour gives this tiramisu a little modern twist on the italian classic. It's stylish, subtly sweet, and easy to make.

Matcha Tiramisu
Serves 4

Ingredients:

  • 1 egg
  • 60g caster sugar
  • 1/2 tsp salt
  • 1 packet (500g) mascarpone

Matcha soak:

Method:

In a bowl that can be used as a double boiler, whisk together the 60g caster sugar and the egg, until well combined. Place the bowl on top of a pot of simmering water and whisk for around 4mins, until the sugar has completely dissolved and the mixture has thickened slightly. Remove it from the heat and set aside to cool a little.

In another bowl, add the ingredients for the matcha soak and whisk them together. Set them aside to cool.

Using an electric mixer, whisk the mascarpone until light and fluffy, then add in the egg mixture. Keep whisking until they’re well combined.

Dip the lady finger biscuits into the matcha soak (a few seconds on each side is enough) and place them into the bottom of your chosen dish. Layer with mascarpone, and then repeat this step.

Smooth the top layer with a spatula and chill in the fridge overnight.
