Green Tea, Apple and Coconut Cake

Makes 1 small cake



  • 3/4 cup coconut flour
  • 1/2 cup finely desiccated coconut
  • 5 eggs
  • 1 cup unsweetened applesauce
  • 1/4 cup coconut oil
  • 1 Tbsp psyllium husk
  • 1 tsp baking soda
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla paste
  • 3/4 tsp cinnamon
  • 3 tsp Cullinary grade matcha powder
  • 1 green apple, washed and thinly sliced


  1. Preheat the oven to 170 °C and grease a 20 cm cake tin with coconut oil.
  2. In a food processor, combine all ingredients apart from the sliced apple.
  3. Allow the mixture to stand for a minute to allow the psyllium husk and coconut to absorb the liquid.
  4. Scoop and push batter into the prepared cake tin. Decorate with slices of apple.
  5. Bake for 35 minutes or until cooked through.
  6. Allow cake to cool completely before removing from tin. Serve with full fat greek yoghurt for afternoon tea. Store in an airtight container for 3-5 days.
